Laksa paste, a speciality of Nonya cooking, is great to have on hand and allows you to throw a fabulous soup together at the last minute. The paste needs to be cooked to make it palatable and desirable — the heat brings out the subtle flavours of the spices as they infuse into the added liquid, usually stock and coconut milk or tamarind liquid. We use this laksa paste in the Restaurant and sell it under the Paramount label.
