This most fragrant paste is another staple in my repertoire and one of the products we sell under the Paramount label. It brings a simple stir-fry to life and gives the food a fiery zing. The flavours are released immediately with the application of heat and respond best to a quick, high blast — anything else only results in a stewy mess. Best with fish, poultry and vegetables.
