Massaman curry paste, specific to central and southern Thailand, translates as ‘Muslim curry’ and is named after the Malay traders who influenced the foods of the region over the past century. Curries made with this paste are complex, rich and spicy with a wonderful depth of flavour due to the inclusion of the Indian spices cardamom and cinnamon.
