A wonderful condiment to serve with sour curries, roasted meats or fried pastries. It has a strong and powerful flavour, so use it in moderation.
Bring all ingredients to a simmer over low heat in a wide-based pot. Cook gently for 10 minutes, then remove from heat. Spoon into jars and seal. Store for 2 weeks before using. Keeps indefinitely.
