Nam prik literally translates as ‘chilli water’ and is an essential dipping sauce for Thai food — fiery-hot with chilli, sour with lime. A nam prik can be cooked or uncooked, and both versions should be treated with respect. The sauce is usually served with raw vegetables (especially cucumber), crispy fish and sweet pork and is intended to arouse the palate and excite the appetite.
