Use extra-large or jumbo prawns for these fritters, as their size stands up to the cooking better than smaller kinds, resulting in better flavour and texture.

Method

  1. Make batter as instructed and set it aside for the designated time.
  2. To make the salad, heat oil in a deep-fryer to 180°C.
  3. Fry eggplant until golden, then drain on paper towel. Mix eggplant with remaining salad ingredients in a bowl, then cover and refrigerate until ready to use.
