This is a popular Nonya way of preparing chicken for eating as a snack or as part of a meal. You will never want to eat fast-food fried chicken again after tasting this delicious version!

Ingredients

  • 1 x 1.8 kg free-range, corn-fed chicken
  • 1 quantity Turmeric Rice

Method

  1. Cut chicken into 12 pieces on the bone.
  2. To make the marinade, bring all ingredients to a boil in a stockpot. Simmer for 10 minutes, then add chicken pieces and simmer gently for 6 minutes.
  3. Remove from heat and allow chicken to cool in marinade for 5 hours.
