This dish is so simple and clean-tasting: it relies on the pure flavour of good-quality chicken highlighted by the zesty freshness of the green garlic relish.


  • 5 green onions
  • 1 x 2 kg free-range, corn-fed chicken

  1. Chop 2 of the green onions and put into cavity of chicken with ginger, then truss legs. Rub sea salt and white pepper into skin of chicken.
  2. Put chicken into a large bowl, breast-side up, then pour in stock, rice wine and mirin. Cover chicken with baking paper, then seal bowl with foil.
  3. Stand bowl over a large saucepan of gently boiling water and steam
