Vanilla ice-cream is perhaps the definitive ice-cream of all time, so please don’t get cheap and use vanilla essence or the imitation variety. This ice-cream demands the flavouring only available from the spectacular little seeds of the vanilla bean.

  • 500 ml full-cream milk

Method

  1. Scrape seeds from vanilla bean into milk in a saucepan, then add bean and bring to a simmer over very low heat. The slower the infusion, the better the flavour.
  2. Whisk egg yolks and castor sugar in a bowl until pale and creamy, then whisk in hot milk mixture.
  3. Stand bowl over a saucepan of gently simmering water and cook, stirring, until mixture coats b
