This is a variation of the orange cardamom ice-cream included in Paramount Desserts. The pungent, sweet spiciness of the cardamom combines beautifully with the tangelo. Make this during the winter months when tangelos are in season, or substitute blood-orange or mandarin juice for a slightly different flavour.
