My time spent working with Phillip Searle taught me, among other things, how to incorporate the delicate flavour of spices into dessert work. This ice-cream forms part of his sensational, definitive chequerboard ice-cream. I make it to serve with caramelised oranges, Spiced Pineapple, toffeed apples or young coconut flesh.
