This dessert, with its Middle Eastern flavours, first appeared in Paramount Desserts but begs for a place in this chapter because of its obvious spice content. Oranges and cardamom are natural and easy partners in the flavour spectrum, which is why they are often combined in sweet confections. You could substitute tangelos, blood oranges, mandarins or clementines for the oranges.
