  • 1 chicken carcass
  • 1 free-range, corn-fed chicken
  • several slices

Method

Wash chicken carcass in cold water to remove all blood. Put all ingredients into a stockpot and cover with water. Bring to a boil over gentle heat and simmer slowly for 2 hours, skimming frequently to remove any scum. Remove solids carefully (strip meat from chicken and keep for another use) and discard. Strain stock through a fine-meshed sieve to remove all sediment. Allow to cool completely b
