Although this stock is prepared in the classic western method, I have incorporated the fresh flavours, aromatics and textures found in the wonderful Vietnamese pho soup to cut through and lighten its inherent richness. Ask your butcher to chop the oxtails into pieces for you. Oxtail stock is required to make Oxtail Consommé with Dumplings, Bean Sprouts, Mint and Chilli.
