The following quantities are sufficient for the dishes in this book that include egg noodles. However, if you want to make the noodles the feature of a meal, you will need to increase the quantities — simply multiply the ingredients as required. The following will feed three or four people as a main course.

  • 250 g bread flour
  • 3 large (61 g) eggs
  • 20

Method

Blend all ingredients except rice flour in a food processor until dough forms a ball. Wrap dough in plastic film and refrigerate for 1 hour.

Cut dough into 4 pieces, then flatten each piece by hand or with a rolling pin. Pass each piece of dough through the rollers of a pasta machine, starting on the widest setting and working your way through each setting until you reach the finest. Du
