This green juice imparts a mild cucumber flavour and is useful for adding flavour to salad dressings.


  • 1 cucumber
  • water


Peel cucumber, then chop flesh roughly. Blend flesh with a little water in a food processor. Pass juice through a fine-meshed sieve and discard pulp. Refrigerate cucumber juice for up to 3 days.
