I give two recipes for samosas in this book, but you may also like to try your own filling combinations.


  • 200 g plain flour
  • 50 g chickpea flour
  • 1 teaspoon</


Blend all ingredients except vegetable oil in a food processor until dough forms a ball. Wrap dough in plastic film and rest at room temperature for 2 hours.

Roll pastry into a long sausage. Cut pastry into 18 pieces, then roll pieces out thinly into rounds. Spoon your chosen filling into centre of each round, then fold in half and then in half again to make a triangle, pressing edges t
