Morning Glory muffins are dense and nubbly by nature, making them perfect candidates for the addition of soft cooked red lentils. If you’d rather go the canned bean route, purée a cup (half a 19 oz/540 mL can) of rinsed and drained brown lentils or white beans with the buttermilk, oil, and eggs before adding them to the dry ingredients. (Leave out the dry red lentils, unless you really want to go to town with a double whammy of beans.)
