An egg cracked on top of your pizza before sliding it into the oven will bake to any degree of doneness you like; try leaving it runny, so that the yolk oozes out when you slice it. Cheese options aren’t limited to mozzarella; try shredded Gouda, white cheddar, Edam, or fontina; grated Parmesan; sliced bocconcini; crumbled feta; or a smear of ricotta.
