One of those salads that makes heaps, but keeps really well in the refrigerator. You can dip into it for lunches and after going to the gym, and bring it back to the supper table the next night. As with most recipes of this nature, the proportions and ingredients are extremely fluid. The wild rice keeps the texture that little bit crunchy, but feel free to substitute brown rice or omit it altogether. If you need to feed a crowd, keep the wild rice but bolster the salad with some whole wheat
