Sliders make so much sense to us: when you’re eating mini-burgers you don’t need to commit to dressing them just one way. You can have two! Or three! Sliders make great party food. You can also eat the patties broken into two or three pieces and used like falafel in pita bread, or shape the mix into meatballs for any use you like.

Method

Start by very coarsely mashing the chickpeas with a fork—don’t turn them into a paste, and don’t use a food processor or you’ll wind up with purée. Crush the rosemary, thyme, and fennel seed together with a mortar and pestle or rub it between your fingers.
