Chickpeas are easy enough to roast in a heavy skillet or in the oven with a skiff of oil. This process is a little more involved, but the result is positively addictive. It may sound garlicky—it is. Adapted from the January 2008 issue of Bon Appétit.
In a baking dish or cast iron skillet, combine the chickpeas, whole garlic cloves, shallots or onions, and oil.
