You know scalloped potatoes? This is like scalloped potatoes, with character. It’s heavenly. Although it would be perfectly appropriate to serve this alongside a roast chicken or the like, it also fits the bill as dinner on its own. (Anytime we’ve made it we’ve eaten enough to calorically count as dinner.) In fact, neither of us recall ever having leftovers. It’s pretty fab with a bit of finely chopped rosemary thrown in with the onion, too.
