The name was suggested by Sue’s daughter Evelyn. How could we say no—and why would we want to? There’s plenty of orange and lemon zing here, but you can increase the zest even more if you like. Just be sure to wash and dry your fruit well, then grate the zest as finely as possible, avoiding the bitter white pith—it’s no friend at all to your good baking. Oh, and always zest before juicing! It’s a little awkward trying to grate a deflated citrus fruit.
