These candied lentils can be used in so many ways: you can add them to muffins, crisp toppings, cookies—whatever you might add nuts and seeds to. The red lentils really lend themselves to this preparation; when boiled with the sugar and butter they retain their shape to a much greater degree than usual, and their colour is appealing in most baked goods.
