Southwestern Summer Squash Frittata

Eggs are eaten just about every day at our house because we have a yard filled with free-range chickens! Over easy or omelets are our standard go-tos, but when we have company or a leisurely weekend, frittatas are a flavorful treat. They are great for company because you can pop one in the oven, then tend to other things (like making coffee) without distraction.
