Pattypan are adorable, UFO-shaped squash. If large, their squatty shape means the inside may not get completely tender unless you cut it in half or quarters. Baby pattypan can be used whole. Pattypan are not always available, so substitute thick-sliced zucchini or yellow squash.

Ingredients

  • 1 pound baby pattypan squash
  • 2 carrots
  • 2 tablespoons

Method

Cut stems from squash. Cut in half or quarters, making sure pieces are about the same size. Peel carrots, and then continue to use the vegetable peeler to create ribbons.

Melt butter with oil in a large skillet over medium-high heat. Add squash, salt, and pepper; cook, stirring occasionally, 5 minutes. Add onion and garlic; cook, stirring occasionally, 3 to 5 minutes or until vegetables
