Tagines, both the name of the dish and the vessel it cooks in, are basically Moroccan one-pot meals. A tagine pot is a shallow, round pan with a conical lid. The design enables condensation to rise to the top, condense, then drip down to baste the food, keeping it moist and succulent. Check the manufacturer’s directions, as many clay tagines cannot be used on a cooktop. Some tagines have steel or cast iron bases, which are safe for gas or electric cooktops.
