Squash Spice Cake

This yummy cake is a riff on the traditional Southern favorite dessert, Hummingbird cake, with grated squash subbing in for mashed bananas. While cakes can be time-consuming, it’s faster if you just put the frosting between the layers and don’t try to frost the sides. It can be covered and frozen up to 3 months. Remember, it’s a dense cake, so remove it from the freezer a few hours before serving so the inside isn’t solid.
