Make a small slit lengthways down each chilli, leaving the seeds and stems intact.
Mix the yogurt and salt together well in a non-metal container or large glass bottle with a non-corrosive lid.
Add the chillies to the pot and give them a good stir so that the yogurt coats every chilli inside and out. Put the lid on and leave to marinate for 3 days.
