  • 10 cashew nuts
  • 1 small cauliflower, broken into florets
  • 2 tbsp oil

Method

Put the cashew nuts in a small saucepan, cover with water and bring to the boil. Cook for 3 minutes to soften. Cool, roughly chop, set aside.

Steam the cauliflower for 5–6 minutes, until still crunchy. When cool, chop it into small 1–2cm (½–1 inch) pieces.
