In a food processor, finely chop the kale.
In a medium bowl, mix the chopped kale, chilli flakes, ground cumin and turmeric, and salt. Set aside.
Heat the oil in a large, lidded frying pan (skillet) or wok over a low heat. Add the cumin seeds, curry leaves, onion and garlic, and sauté until the onions are soft and golden.
