  • 250 g (9 oz) bunch of kathurumurunga
  • 2 tbsp oil

Method

Hold the bottom end of one kathurumurunga stem with your thumb and index finger. Start pulling the leaves off with your other thumb and index finger, working your way up the stem in a scooping motion. Repeat for all the stems, collecting all the leaves together in a medium bowl of water. Give them a good wash, then drain.

Finely chop the leaves, a handful at a time, and set them aside.<
