  • 250 g (9 oz) chunk of pumpkin (about ⅛ medium)
  • 2 tbsp oil

Method

Peel the pumpkin. Remove the seeds and stringy fibres using a spoon and give it a wash. Cut it into 2.5cm (1-inch) chunks.

Heat the oil in a medium saucepan over a low heat. Add the fenugreek seeds, curry leaves, rampe leaf, green chilli, onions, garlic and ginger, and sauté until the onions are soft and turning golden.
