Remove the skin from the fish, cut it into about 1.5cm (½-inch) chunks and wash well. Put it into a medium, lidded saucepan and pour on the water so that it half-covers the fish. Add the salt, the black peppercorns and half the turmeric, and partly cover with the lid. Bring to the boil and cook for about 15 minutes, stirring occasionally until the fish is cooked and all the water is absorbed. R
