  • 400 g (14 oz) whole fresh anchovies
  • 1 tbsp red chilli flakes

Method

Remove the heads from the anchovies and pull out the guts, discard both. Wash the anchovies well, at least two or three times in a medium bowl, then drain the water.

Mix the chilli flakes, turmeric and salt together in a medium bowl. Add the fish and leave to marinate for about 10 minutes.

Heat the oil in a medium, lidded frying pan (skillet) over a low heat. Tip in the anchovie
