The method here couldn’t be simpler: whizz together all the ingredients, marinate the chicken, then bake. It’s ideal for a midweek dinner, served with a punchy pickle and plain rice. Ovens are actually a relatively recent addition to Sri Lankan homes. All cooking used to be done over heat, so this is a fairly new idea – a Westernisation of a traditional dish.
