Wash the bones well and put them in a medium, lidded saucepan. Add all the ingredients except the coconut milk and lime juice. Bring to the boil, then reduce the heat, half-cover the pan with the lid and simmer for 35–40 minutes.
When the water is reduced almost by half, increase the heat, add the coconut milk and bring to the boil. Reduce the heat and simmer for a further 5 minutes unt
