A ‘retro’ Sri Lankan pudding with a clear British influence - but our delectable pineapples make this favourite more than just a nostalgic throwback!
In a small jug, mix the gelatine with the warm water and set aside.
Put the evaporated milk and sugar in a medium saucepan on a low heat and gently warm it until the sugar dissolves. Set aside to cool.
Roughly chop the pineapple using a food processor. In a large bowl, combine the prepared ingredients and the vanilla essence, and mix well.
