This is a light dessert to end any meal. It is not meant to be served with wine, but to refresh. We prefer to use ruby grapefruit for their sweetness and color.

Serve with Russian Tea Cakes.


  • 2 cups freshly squeezed pink grapefruit juice
  • 2 cups Champagne
  • cups Simple Syrup
  • Pinch salt


Pour the grapefruit juice in a large bowl.

Add the remaining ingredients and whisk together. Pour the grapefruit mixture into a shallow pan approximately 9 by 13 inches and put in the freezer. Every half hour roughly stir up the freezing mixture with the tines of a fork. This will give the granita a feathery and light icy texture.

Freeze until the granita is completely frozen, 8 hours to overnight, depending on your freezer.
