  • ½ pound (2 sticks) cold sweet butter
  • ½ cup sugar
  • cups flour
  • ½ cup cocoa powder
  • Pinch salt

A 9-inch Springform pan


To make the crust

Combine the butter and sugar in the bowl of an electric mixer.

Using the paddle attachment, mix on low speed for 15 seconds. Add the flour, cocoa, and salt and continue mixing on low speed until the dough comes together. This will take about 5 minutes.

Put the dough on a lightly floured board and roll it into a 10-inch circle. Line the bottom and ½ inch up the sides of the Springform pan. Freeze the crust for at least 1 hour.

Bake the crust in a preheated 225 degree oven for 25 minutes. Set aside to cool.
