Cinnamon Toast

Gerald Nachman, a San Francisco newspaper columnist, challenged Jeremiah to come up with a recipe for cinnamon toast the way the old hotels used to make it. This Stars Café version is the only way to make cinnamon toast.

The broiled sugar and cinnamon make a crust that melts in your mouth.

Ingredients

  • 2 teaspoons cinnamon
  • ¼ cup sugar
  • 8 pieces Brioche, or other bread suitable for toasting
  • 2 tablespoons soft sweet butter

Method

Preheat the broiler.

Mix together the cinnamon and sugar in a small bowl.

Toast the bread on both sides until golden brown. Brush the butter on one side of the toast and sprinkle the cinnamon sugar over the butter.

Return the toast to the broiler and broil until the cinnamon sugar bubbles.

Serve immediately.
