Tofu knots are dried sheets of tofu skin shaped into a knot. They are often served as a textural component in Chinese dishes. As they cook along with the food, they take on all the flavors of the dish. Dark soy sauce is thicker and significantly darker than regular soy sauce. With added molasses and a longer aging period, it has a much richer flavor. It is often used to drastically alter the flavor and color of the dish.
