Classically, schaschlik is a grilled meat skewer found all over Central and Western Asia. The word is derived from shish, the Turkish word for “skewer.” This version, a pork kebob braised in an aromatic tomato sauce, is an extremely popular street-food snack found at street-food booths all over Germany.

Method

  1. To make the sauce, sweat the onions in the vegetable oil over very moderate heat in a rondeau or similar pan until very tender and slightly caramelized, about 15 minutes. Add the garlic and sweat until aromatic, about 30 seconds. Add the red pepper flakes, paprika, and curry powder and cook until fragrant.
  2. Add the tomatoes, ketchup, sugar, Worcestershire, Tabas
