  • 8 bamboo skewers, 8 in/20 cm
  • 3 lb/1.36 kg beef sirloin or similar meat, diced

Method

  1. Soak the bamboo skewers.
  2. Cut the beef into ½-in/1-cm dice, mix with the soy sauce and palm sugar, and allow to marinate for about 2 hours.
  3. Using a mortar and pestle, pound the cilantro roots, coriander seeds, white peppercorns, galangal, and lemongrass into a coarse paste.
  4. Skewer the meat, rub with the paste, and reserve.
