Method

  1. Sweat the onions in the fat until translucent, about 3 minutes.
  2. Add the sauerkraut and enough chicken stock to submerge by half. Add the bay leaf and adjust seasoning with salt and sugar. Cover tightly with a lid and simmer gently until tender, about 30 minutes, adding more liquid as necessary.
