  • 1 lb/454 g salt cod fillets (bacalao)
  • 1 clove garlic, minced

Method

  1. To reduce the salt content of the fish, place the salt cod in a saucepan and add enough water to submerge it by 2 in/5 cm. Bring to a simmer, turn off the heat, and drain the water. Repeat the process 3 or 4 times, tasting the fish after each draining to check for saltiness. Repeat as often as necessary until the fish tastes pleasantly salty, comparable to well-seasoned
