Ingredients

  • 8 garlic cloves, peeled and chopped
  • Salt, as needed
  • 2 egg yolks
  • 1 pint

Method

  1. Combine the garlic and salt and crush into a coarse paste in a mortar or with the side of a knife.
  2. Combine with the egg yolks in a bowl, and gradually pour in the oil in a slow, steady stream until emulsified. Adjust seasoning as needed.
