  • 3 garlic cloves, minced
  • 1 oz/28 g minced ginger

Method

  1. In a saucepan or similar pan over medium heat, sweat the garlic and ginger in the vegetable oil until aromatic, about 30 seconds.
  2. Add the vinegar, tomatoes, honey, raisins, almonds, cayenne, and salt and simmer until the chutney reaches medium nappé.
  3. Adjust seasoning with salt, vinegar, and honey to achieve a balanced sweet and sour flavor.
