  • 3 lb/1.36 kg mustard greens
  • 5 garlic cloves, very thinly sliced

Method

  1. Wash the mustard greens thoroughly in several changes of water. Drain, and cut into bite-size pieces.
  2. In rondeau over moderate heat, sweat the garlic, onions, and red pepper flakes in the olive oil until fragrant, 1 to 2 minutes. Add the greens and chicken stock, cover the pot with a lid, and braise slowly until the mustard greens are tender and all liquid has
